We specialize in chocolate bark - thin and flat and sometimes bumpy.  Like tree bark.  We don't know where that name came from, but it stuck.  Must be a Canadian thing.   Sure doesn't taste like tree bark though.  Chipotle Pepper Bark is the #1 best seller - a little cinnamon, a little heat, goes perfectly with good coffee or red wine.  #2 is Peanut Butter Bark, which won an award at the Canadian Fine Food Show several years ago.  We're now somewhere over 30 varieties, plus another 10 or so made with no-sugar-added chocolate sweetened with Maltitol, an artificial sweetener suitable for diabetic diets. 

We're also getting quite a reputation for truffles.  We've now got 29 different kinds, so check out the truffles section.  If we invent any more we're going to need another display case ...

The really unique thing we make is a "shot".  We're smack in the middle of one of the fastest-growing wine regions in the country, so it only made sense to try to marry wine and chocolate.  Shots are chocolate shells filled with different liquids - red wine, ice wine, ice cider, dessert wine and, since we are Canadian after all, pure maple syrup.  Absolutely extraordinary.  But don't try to bite one in half - it's called a shot for a reason.  We won't be responsible for drycleaning when you spill wine down your front.  Consider yourself warned.

One more thing - we make our own sponge toffee.  Half dressed in milk or dark chocolate or completely naked, this stuff is pure bliss.  Not that nasty stuff you remember from your childhood that would either break a tooth or get stuck in between.  Ours is light and airy and people phone ahead to make sure we keep some aside for them.  You won't see it on this site though, because sponge toffee has attitude and breaks where it wants, not where we want.  We can't make it a consistent weight and therefore a consistent price, so you'll have to phone for that one.
